Yes, I think Bugzilla has the disadvantage that its defect workflow is pre-defined and cannot be changed (unless you modify the code yourself).
When you use Bugzilla you are stuck with the defect statuses it provides which I find limiting.
There are many benefits of using bugzilla, biggest one is cost effective, being a open-source tool. It can be customized as per requirements. It can be integrated with many Version control systems like, Perforce, CVS etc. Bugzilla comes with a Unicode support and provides LDAp User authentication.
The biggest drawback is, its workflow is not customizable. I do not think defect status are limited. Bugzilla has quite dynamic report generation.
The limit of a hard-coded workflow is gone in version 3.2. You can edit the workflow as you choose from the web admin UI now.
Version 3.2 is under development (who knows when it will be released?) and where can you edit the defect status workflow as you choose from the web admin UI now? I have not seen that feature anywhere. It would be great if that was the case.
